Dairy Free Chocolate Chip Cookie

IMG_5703One of the harder aspects of going dairy free was the desserts, particularly cookies. Every good dessert starts with lots of butter! I especially love chocolate chip cookies and I was on a mission to find a good alternative. I tried substituting fake butter into my normal cookie recipe and it wasn’t bad, but it was a little oily. I love using coconut oil, so I decided to give that a try and loved it.

INGREDIENTS:

1/2 cup coconut oil, softened
1/2 cup brown sugar, packed
1/3 cup granulated sugar
1 egg
2 teaspoons vanilla extract
1 1/2 cup all-purpose flour
2 teaspoons cornstarch
1 teaspoon baking soda
1/4 teaspoon salt
1 cup semisweet chocolate chips

DIRECTIONS:

Mix together the softened coconut oil, brown sugar, granulated sugar, egg, and vanilla extract.

Add in the flour, cornstarch, baking soda and salt, and mix until combined. Add the chocolate chips.

Make dough balls and chill them in the fridge for at least 2 hours.

Preheat oven to 350 degrees F.  Bake for 10-12 minutes.
